YES/NO or just YES

Yes/No questions - is it better to just have a box to check if the answer is Yes or to have two options a Yes and No option? Welcome your thoughts/ideas on this one as I'm hoping to get two groups to agree on one method. Thanks.

I would say this depends on your audience. Technical folks tend to prefer structured, minimalist approaches, while non-technical users often prefer more context and verbiage. Neither group can deny that check boxes are easier/faster to populate.
If you're going to use formulas based on this value, then a checkbox may be preferred since the two options are just 1 and 0. In extreme cases where the sheet size is VERY large, there may be calculational efficiency gains associated with relying on a binary representation. In all fairness though "Yes" and "No" are not exactly cumbersome to work with, so letting your audience call the shots here is likely your best bet.
