Automation isn't updating my email subject line as I had entered - what am I doing wrong?

The reason you're seeing this is because of the {{dynamic reference}} in the subject line. Even if the {{Name}} is the same for all of the rows, dynamic references treat each cell as an individual, unique cell per-row. This means the Subject of your email cannot contain a reference if more than 1 row is sent in the email, since it doesn't know what row you want the reference to come from.
Remove out the {{Name}} from the Subject (you can keep it in the Body description if you want, which will duplicate the Body for each row) and this should then keep your custom text as the Subject line.
