have a way to apply a default formula to new row automatically
I would request a way to apply that when any information is added into a new row that if there is a column that I want a specific formula in, that this formula is applied automatically to the cell in that new row.
This functionality seems to work when I am entering a new line via a form. It also "sort of" happens when the column is formatted as a checkbox, where the checkbox doesn't appear until another cell in that row has information in it.

That is always the case as long as the last couple of rows before the blank rows have that formula in. Or the first couple if you add new rows to the top. Smartsheet will automatically pick up that formula and apply it to the new rows automatically. If you are finding that it doesn't, try deleting all the blank rows on the bottom of your sheet and refresh the sheet - new blank rows will appear but it should fix that issue and new rows should carry it.
