Is it possible to make individual lines 'Calendar Days' rather than working days? - I have investigated into the project settings and it appears that the calendar dates can only be amended if it changes the whole project? Any advice would be much appreciated.
The working days are indeed per sheet.
So, I don't think so, but can you elaborate on what you want?

Thank you, I believe you have confirmed that working days are per sheet. Can you clarify that if I was to have working days with the exception of 3 lines as calendar days this would not be possible?

Yes, there are no per line exceptions.
HOWEVER:
If what you are looking for is to have a task in a project occur on a non-working day, take a look at the "e" (elapsed) option for durations
