We are sharing a dashboard to work colleagues via Workplace that don't have access to smartsheet at all. When you click on the link on a mobile device the dashboard is not mobile responsive and very difficult to read. Is there a way around this?

How are you sharing the Dashboard... are you using a Published Link (see here) and providing them with this URL?

If so, maybe have them try opening this link in a different browser on their mobile devices to see if this helps. The Dashboard will likely be best seen when their phone is turned to landscape, as well. Then they can zoom in to the different widget types and read the information or click on your links.

If I've misunderstood what you mean, it would be helpful to see screen captures of what they're seeing on their phones, and what the dashboard looks like on your computer to see if there are other solutions.
