How can I add additional fields to the View By list in Card View?

I have a sheet that is only displaying the Status and Priority dropdown lists. I have other dropdown lists that I would like to be able to select in the View By list. How can I get them to appear in the View By List?

Are the other dropdown lists multi-select? They have to be single select for them to show up.
