Trigger after 30 days

I am trying to set up a trigger that will request an update after 30 days has past from the delivery date but using the not in the last (30) days request doesn't seem to work as it is requesting information from people to early. Any idea what trigger would activate 30 days after a date?

That trigger I think is "within the last 30 days", which would explain the issue you're having.

I think you're looking for "30 days after" the date field you're looking at. Screenshot below:
