I do not see an error log, additional columns headers were added to the the target sheet but no data ever appeared. how can i find out if there was an error or even see my data? I changed it to a copy so I would not "lose" any more data until I got it figured out.

Have a look at the bottom of the sheet, and if it's not there, you can take a look in the Activity Log.

Also, make sure you don't have any active filters.

Unfortunately, no, it's not possible to change it, so they come in at the top.
