In our Smartsheet license, why was the ribbon toolbar for any created sheet made unadjustable???

How can I modify the ribbon toolbar to make it easier to work in Smartsheets - the ability to adjust the toolbar appears to have been removed(?). Ugh. The new rigid layout doesn't work well for the kind of work I do. Thank you!
