Counting all children, including nested children
Hi - I think I have stared at this enough and tried many ways of sum and count formulas, but is there an easier way to count ALL the children of the highest outdented parent row which has multiple "sub-rows" with children underneath? I am trying to count the cells that are nexted beneath those rows and the children () function will only return count 1 level below the parent not 2 or 3 for example.

Yay, I know this one. You need =COUNT(DESCENDANTS()).

Another handy one is =COUNT(ANCESTORS())
Not for your use case, but I use it all the time to apply formulas and conditional formatting based on where a row lands in a hierarchy.
