I am updating a large project sheet where all team members have been assigned tasks. I need to push out those dates and add comments without pinging team members with every little change I make.

Is there a way to suspend notifications, make your changes, then re-enable them once complete; sending a single mass notification to all?

You would have to disable the workflow rules, make all the changes, save the sheet, and re-enable. Notifying the team members in one mass email would be a manual process; you could either email them, or alert them through a comment from with the sheet.
