Copy rows and capture changes

I want to copy rows from multiple sheets to one project sheet. But I want to capture any changes from the multiple sheets without creating a new row to the one project sheet.

I am not exactly sure how this would work. For the multiple sheets I have the "Copy" automated workflow on, what would I need to add to those, just the unique ID?
I would then need to change my "Copy" workflow to "when rows are added" only, instead of "added or changed"? As the formula on my project sheet would update when there are changes, correct?
