How to track preivious months status

Question

Hello Everyone,

I wanted to track the Status of the Project. I have one-sheets in which all the projects are listed and the leads are updating the status through the RGBY symbol column for example, on 1st Oct the status is Yellow, on 1st Nov it is updated to Red, so on 1st Dec, I want to see the status of Oct and Nov in different columns, please see the below screenshot for reference.

Please suggest some way to achieve this, I am not using any formula for calculations.
