To follow-up on this, yes, it IS now possible to see which user has unsubscribed from a workflow by going to the Properties of that specific workflow. Here's more information: Make updates to your workflows

Hi Dale,
There currently isn't a log in Smartsheet that lists users who have unsubscribed from a workflow; please submit an Enhancement Request when you have a moment!
If you're concerned that someone has accidentally unsubscribed, you can clone the workflow and they will automatically be subscribed to the new version (see here).

thank you - is there a setting as an Sys Administrator that can prevent people from unsubscribing?

Hi Dale,
No, at this time there is no way for a System Admin to prevent users from unsubscribing, other than cloning the workflow to create a new one. Please submit an Enhancement Request when you have a moment.
Thanks!
Genevieve

Is there a way for a person to opt back in once they unsubscribe from smartsheet notifications? I'm hoping it works to simply toggle that specific persons sharing of the sheet (remove shared permissions, and add them back on?)

Hello @tylermh ,
For a user to to begin receiving notifications from Workflows (Alerts, Reminders etc), you can clone your Workflow, and disable the the original. The new Workflow (Clone) will then begin to re-send notifications.
This method is beneficial if multiple people have unsubscribed.

I see this post is 2 years old.
Do you know if this is now possible to see who has unsubscribed to a workflow ?
Thanks,

You can see when a user unsubscribes from a Workflow by checking the Activity Log (if your plan and sharing permissions allows you access to this log):
Although this doesn't identify which workflow, it should allow you to narrow down what user is no longer receiving your alerts.
Cheers,
Genevieve
