Mobile View Modification

So a couple of things here:

"Right now when switching to mobile view it shows basically a button for each row of data in the spreadsheet. The default data shown on the button is for the first cell in the row."

Actually the data 'on the button' is the data in the 'Primary Column' of the sheet, which in your case happens to be the first column in the sheet. As far as I know, this will always be the case. So to change the data that shows 'on the button', you need to change the data in the Primary Column, possibly by moving the existing data to a new column and replacing it with whatever meets your requirements. You might want to check this doesn't have any implications across reporting, formulas and automations by doing it on a copy first.

Then when you expand the button it only shows the first 5 cells of the row, is there a way to get it to show all of the cells in the row without having to click the ellipses and entering edit mode

Yes, a the top of the phone, click 'Settings' and select the columns you want displayed.

You can use a formula to collect together or select something else to be shown in the Primary column.

Unfortunately, as far as I know, it's not possible now to push out the same setting in the mobile app (except the primary column, which will show the same for everyone), but it's an excellent idea!
