Work on days not normally a work day.
Is there a way to work on days not normally a workday, ex. work on one saturday. So a 2 day job can be set on friday and saturday, without changing the whole calender of workdays?

i know that if you are using a gantt charts, there is a small gear in the top left corner of the chart window. that is for the settings fore that sheet. in there you can change the working days.

I tried, but it changes all saturdays on the sheet to working days. Which changes the whole timeframe for the project.

One option for scheduling a task on a non working day - add a new row for the task and schedule it on the Saturday only.
Another option is to schedule the task for Fri-Sat and make the duration e2d (you may need to adjust the start date back to Fri after adding this duration). e = elapsed. This means the task will take the full 24 hours of the day and will disregard working days.
Something to keep in mind when using elapsed duration: this will schedule the task for the full 24 hours. This means if you are using resource management (assuming your workday is set to 8 hours), 8 hours = 100% allocated for a day. 24 hours = 300% allocated for the day. If you are not using RM, you shouldn’t have any issues.

Since elapsed time is in 24 hour chunks, you might use e1d instead of e2d.
A task that starts at 8am on Friday will end 8am on Saturday and show Friday's date as the start and Saturday's date as the finish.
Also, the forcing a work-day on a non-work-day by adding a Saturday task does not work for a two day task - the second day wants to be the following Monday. If you run into that, another task row for the Sunday work is needed.
At least, that's the way it works for me.
It can be screwy and I may be doing it wrong.

Based on your response, I learned about the eXd duration but I don't quite follow part of the behavior. For a task scheduled to begin on Saturday 5/13 with a duration of e2d, why is the end date calculated as Monday 5/15? Seems to be 3 days to me.

Elapsed time schedules tasks in full 24 hour days. e2d would be 48 hours.
If your workday is 8 hours long, then then your start time is 8:00am (this is calculated in the background). If you have an elapsed task starting on 5/13 at 8am, then 48 hours from that will be 8am on 5/15.

Can the start time for tasks be modified? I also tried researching more information on this in tutorials, etc., but didn't see it. If my questions are already documented, please let me know and I will review.

Start and end times are automatically set based on the length of your workday (8 hour workday starts at 8 and ends at 5). There is not a way to change the start of the workday without adjusting the length of your workday (even then, it is automatic). This is done in the background, so there is not a detailed article on this.
Here is info from the Modifying Project Settings Help Center article:
Length of Day (hours): Set the length, in hours, of working days in the project sheet. By default, Smartsheet considers each working day to include 8 hours. The length of each working day is taken into consideration when calculating dates of tasks. For example, if you create a task with a start date and a duration of 9 hours, by default, Smartsheet will automatically schedule the end date to take place the next working day. If you were to change the number of hours in a working day to 9, Smartsheet would schedule the task's end date to occur the same day it starts.
