I have noticed on log history that one user has successfully logged in. I have full admin account, can I check his activity since last log in ?

Yes, to a degree. If you have the proper privileges then you can export a Sheet Access Report csv file specific to a particular user via the Account Administration panel.
It will not detail what the user has done within a sheet, however. You would still need to access the Activity log for the accessed sheet and filter by user.

If you want to do a history report by user, the only way to currently do this is with the API. Even still, it may not provide you with all of the changes by user (things like formatting, etc), but I do know from experience that it is possible to do. I find it is better to pull large data out of SS for processing rather than relying on the internal formulas and links.
