Is there a way to keep the weekends greyed out even though I prefer weekends to be included as project work days?

Hi @Adrian T

The colouring behind the Gantt View columns is determined by the Working Days that you set in the Project Settings window.

This means that if you have Saturday and Sunday set as Working Days, there isn't a way to ensure they're still greyed out:

Or if you de-select other days to indicate them as non-working, such as Wednesday and Thursday, these will appear with a grey background:
