The way I think about it is that Editors have permissions to update content, but the ability to change a sheet's structure is reserved for Admins +. 🙂This Sharing permissions chart has more details:

You can add a couple of spare columns to your templates for your PMs to use if they need to. Then they won’t need to ask you at the time of need.

Thanks @Genevieve P. I've read through the permissions, just curious about this one. I am wanting to use a template for a project plan so that all PMs track the same information. But if they want to track something additional, I think they should be able to. They'll have to contact me to do this for them, which seems silly.
