When I try to add a new notification, the "Notify" column shows my name and is frozen.
Is there any way to unfreeze it, select or input the name/email I'd like to send to ?

Smartsheet will only allow you to email people shared to the sheet. (I assume to prevent spam). I believe you may not have options because you do not have a contact column and because no one else is on the sheet. Adding a contact column also requires the recipient to be shared on the sheet, but it at least lets you choose the column.
