why doesn't my status column come up when i choose what value to change when date is reached?

The automation says statuses is something that can be changed, but doesn't show my status column where i need to instruct it which status to show when a date from another column is reached. See screenshot.

Is it because the column is symbols? should it be drop-down and be literally spelled out, if we want color statuses? i.e., gray, red, green, yellow, blue and i can create a condition that if it's gray, the cell color should be gray and so on?

Is your status column by chance a column formula? It's difficult to say for sure without seeing everything on the sheet.
