How do you update an existing users email address due to a last name change?

Hello, I'm a system admin and I've run into something new and I haven't been successful in finding an answer to.

I have an existing user who recently got married and changed her last name. Her email address has been updated in our systems to reflect the name change. Example: Jane.Doe@company.com to Jane.Smith@company.com

I can edit and change the last name of the employee, but I can't find a way to change the email address when in the edit screen. Any help on how to update her name and email address would be greatly appreciated. Thanks

We use the Merge Users function in the Admin Center within the User Management menu. In our case, Active Directory ends up creating 2 users, so we use the Merge function to roll the old name/email to the new one.
