Override an Auto Number in One Cell
Is there a way to override an auto number in one cell, but leave the column as an auto number?

Not directly. What you CAN do is view the autonumber column as a preliminary, provide an "Override" column as an optional column, and then have a second column that's the "Official" number that reflects the Override if it exists or the autonumber if it doesn't. The one thing to recognize is that the override will result in multiple potential issues (e.g. number duplication, losing control of formatting convention, and some other issues) - so as you're evaluating for your use case, be sure you take these into consideration.
