Projects per sheet?
I have 10-12 projects each year that will use the same project steps. Is it better to create one sheet to house all 10-12 projects and seperate them using the parent/child relationship. OR, is it better to create one sheet per project?
I'm also thinking about how this will report up to a Smartsheet Sight for status updates.

Without any more information, I would tend to create new sheets/workspaces for each project. If all you have is a schedule, it may not be to bad, but you will eventually run into the row limit (5000).
For your Sights KPI's, you are going to need to couple or decouple the data somewhere. Splitting the projects should not add too much to the cost to develop it.
