I have a dropdown list with 5 values and inserted an IF statement into the cells for that column to auto-fill 1 of the 5 values. I noticed when doing this you can no longer access the drop down list. Is there a way to auto-fill so the cell isn't blank to start but still allow users to access the 5 values in the list?

It's partly true: you can access the drop down list (with the formula - see below) - until you overwrite it with chosing a value from the list.
I know that it would be fine to have both the auto-fill and the drop-down (back and forth), but it's not possible. In similar cases I make two columns: one with the drop-down for users and one locked column with a formula for myself.
