V lookup in sheet summary
Is there a limit to the number of V lookup reference sheets I can use on a sheet's summary tab? It seems like when I change a field to reference 'Sheet A,' and save, the other fields also change to 'Sheet A' even though I indicated 'Sheet B' for that field.

Sometimes I've caught myself using the same {RangeName} for lookups and other formula. When in doubt, remove the range from the formula and click on the "Reference Another Sheet" from the formula hover-tip window.
As a general practice I try to be fairly specific with my range names, like: {Range_Name_Start} or {Range_Name_End}

It depends on how you are making the change. If you "Edit" the reference, it will automatically update all other references of the same name on the sheet. If you are trying to change just that one specific reference in that one specific formula, you will need to follow Ezra's advice of removing the reference from the formula, then using the "Reference another sheet" link as if you are building it from scratch.
