Create workflow off of date and time column?

Hello, I understand smartsheet cannot accomodate date and time in the same column. Is there a way to create alerts and workflow off of tasks with date and time in 2 different columns?

How exactly would you want to use it? Workflows cannot be set to run at a variable time that is in a column on the sheet.
