Log the date and time a cell changes to a specific value

Hello. I've got a sheet I've developed to track approval of purchase agreements. After an agreement makes its way through the approval process, I have the cell "Final Approval" display the words Agreement Final Approval, and the cell is conditionally formatted to red.

The main users would like me to log the time and date this cell changes to Agreement Final Approval, and I can't figure out how to do this.

I thought about using the "Modified Date" system column with an AND Boolean on the Final Approval cell, but this will change every time the row changes.

For now, I've set up a notification alert to send out an email, but I'd really like this data to exist within the SmartSheet itself.

Any ideas? Thanks in advance.

Andre, will do. I'm not sure how to use a VLOOKUP, as the furthest left column (upon which I'd base my lookup) isn't a unique value. I'm thinking of maybe adding an auto-number there...
