Is it possible to get any statistics on if users have been looking at sheets and dashboards?

I don't want to track changes but get more of a viewership report to see if people are looking at the info we make available to them via dashboards.

Yes you can look in the activity log and filter based on views Go To this Icon on the right side of the sheet and then set the filter to views

Then you can adjust the Date Range as well

** If it is a published sheet and it is accessed using that link it will just say "Published User"

There is a premium add-on, Event Reporting that can provide you with much more information.
