Request maintenance time

Hi,
The company where I work we use a Smartsheet intake tool to create and maintain the vendors.
As an admin we are facing an issue which is there is no option for maintenance time. Usually banks and other organizations sometimes send email about their site , services are going to be offline for half a day due to maintenance. This is not an option at Smartsheet at the moment.
We have approx. 10 forms, quality and the production system. There are unnecessary columns , duplicated ones etc. We have tried to clean them out but due to the continuous activity at the sites and between them we are not able to perform the cleansing.
If we were able to close out all users except the admins even for an hour it would be great.
