Managing Multiple Projects? Project Hub & Workspaces

Hi, I've set up a Project Hub using a template set - in a new Workspace - so that we can see all Projects in one place and, when needed, be able to see Reports for overdue tasks across all Projects rather than having to go to each individual Project for a Report.

Now want to move some existing Projects into it, but I see I'd be moving them from their individual Workspaces into my new one, which would mean I'd lose the flexibility of permissions and sharing within Workspaces.

Can I do this another way? I want to see data in one central place across multiple Projects. Maybe I've misunderstood the best way to set this up and the Hub template is not the solution?
