We don't want project teams to use yellow ball. Is it possible to have only Red and Green Balls as Drop Down Options to select for Status?

Unfortunately, it isn't possible, but you could have a message show up if they select it so they have to change it and you could also automate and send an update request if they still register the Yellow one.
Would that work?

well, it may work, but an update request would be a re-work and it is not productive. May be I need to submit a product enhancement request asking to provide an option of just two balls: red and green...
BTW, what do you mean by saying "have a message show up if they select"? Do you mean email notification or some kind of a pop up message/text box that is displayed when certain symbol is selected? if second, it may be an interesting option, but I'm not sure how to implement it. Could you please elaborate?

With the message option, I was thinking of having a message in a cell show if they select Yellow.
Try something like this.
=IF(Status@row = "Yellow"; "Please select Red or Green")
The same version but with the below changes for your and others convenience.
=IF(Status@row = "Yellow", "Please select Red or Green")
Depending on your country you’ll need to exchange the comma to a period and the semi-colon to a comma.
You could also do a dropdown with the text Green and Red then reference the dropdown in a helper column with the correct symbol next to it. Then lock the helper column so they don't mess up your formula.
