Sheet formulas are not auto-updating until the sheet is opened
Is this still a known issue with the TODAY() function OR is there a way to get around it?

I believe it's still an issue.
I update sheets with data shuttle using expressions, such as the TODAY() function within them, and that seems to also update the TODAY() function without having to open the sheet.

We don't have Data Shuttle but I'll try to figure out a similar workaround.

I'm not sure how well this would work, I've never tried it.
You can try the "Record a Date" automation in a helper column and reference the helper column where you are using the TODAY() function. You can use a condition such as the Date is Not Today or something of that nature if you need to add more conditions to it for any reason.
It will record the date that the automation was triggered. So if you schedule it to run in the morning of the next day, it should replace the whole column with "Today's Date".
Since it would be scheduled, you wouldn't need to do much but set it up.

Digging deeper - the original issue, in my case, is likely is due to the fact that today is the first day of the month. In that case, I could schedule the workflow (that populates the helper column) for the first of each month.

For anyone having a similar problem, I have been using this method (automation to record date daily on hidden helper column) for years to keep TODAY() references up to date, and it works well.
