PMO Project Intake Sheet & Project Metadata

Hi, I'm using the PMO template to create the intake sheet and metadata. I see where in step 1B you can edit this column. What are people editing this column to say? Does it has to still be a drop down?

What if I don't have an edit, can it just be deleted? I'm thinking I can't based on the note below.

    The goal for the sheet would depend on what you are trying to track and why you are creating this sheet set (what are you trying to accomplish). In the sheet that I have: I have those modified to be different project types, Status, Who the assigned personnel are, who the client is for the project; etc - as we are using the intake sheet and the metrics to track interdepartmental work and I want to break the metrics down for the following: by client, by service line, and by PM.
