Dont trigger workflow on specific dates

Hello Community,

im building a tool in which we input data from the last day every day.

So i have a form in which workers are filling information about the yesterday shift. On Friday they are filling in it for thursday and on monday they are filling in the information of last friday. (And so on)

The information is then aggregated and automatically shown on a dashboard.

On tuesday night (after the monday shift) i have a workflow, which empties the sheet of the previous data and blanks the dashboard (so on tuesday morning the workers can start putting in data for monday).

The problem: We have 2 public holidays on monday each year here in germany. I want that on those specific two days the workflow isnt triggered, because the workers will input and review the data then on tuesday for last friday.

Is there a way to give such exceptions to a workflow?
