European Date Format - Only working visually?

Hi,

I have two columns in my sheet that are set as dates, though many of them are formulas that derive in dates based on variables such as, [If date 1 = X and task 1 takes 3 days, DATE = Date 1 + task duration = X+3] and so on.

I have the date columns formatted in Day/Month/Year:

however it only seems to impact the visualization of the columns. If someone goes to enter a date, it reverts back to Month/Day/Year (yellow highlighted cell in screenshot):

Meaning that if someone were to type in 2/8/24 (needing August 2nd, 2024) it would then auto change it to Feb 8.

How can I change this? It is creating many issues, it needs to ALL be in Day/Month/Year format.
