I am setting up some automations and would like to add some formatting to the message being sent to a customer. For starters it seems like Smartsheets is ignoring carriage returns. And is there any way to insert a hyperlink?

Unfortunately, it's not possible at the moment to add any formatting, but it's a great idea!
Please submit an Enhancement Request when you have a moment.
You should be able to add carriage returns and links. What kind of automation is it?

For what it's worth, I am using the update request automation in a workflow of mine. I have a live URL that I pasted into the message body of the update request copy that the recipient receives. It is live in the format of the email and takes them to the desired location.
