Live Dashboard Help! Data not interpreting correctly

Hi, hoping somebody can help with my below task:
I currently have what is considered a 'master tracker' sheet for multiple (100+) projects, with several other columns for target dates/owners/SLA's etc, so it is quite complex. I am trying to find the best and most efficient way to pull selective data from 2021 onwards across into a live dashboard.
Ideally I want graphs showing the month and SLA response times over 'x' amount of days (to show where SLA's have not been met). I also do not need ALL information from the sheet as some of the information backdates 2 or so years. However, if I select which data I want to include in the chart, I presume this will not include anything new that is added to the tracker(?), which I need it to.
I also can't seem to set the chart up to show specific months rather than each date logged, so am not sure if I need another formula to interpret the month/year.
Am I missing a trick here? Is there a simple way to interpret the selective data I want into a graph or a formula that can work this out for me?

I'd recommend creating a report because that would be updated automatically.

Thank you for your suggestion, ideally I would like a dashboard as there are multiple elements I need summarised in a visual format and we thereon would screenshot these diagrams to be placed in a PPT presentation.
I have looked into reports but seem to get the same restriction where I can't view by month, only by date of a particular item logged.
Are you aware of any way around this? :-)
