Can you set default values for columns?

I have created a form. The form has about 20 entries to fill in, however, only 5 of them are required because many times the employee filling out the form doesn't have all the information when they fill out the form.

Is there a way to set default values to columns (or cells) that are not assigned a value?

You could use Workflows combined with the change cell action.
