Tracking record of Email notification in the sheet while sending reminder

Is there any option to record or tracking a email notification as reminder which using sending using workflow automation. As per below scenario

I have a created workflow with 7 level of approval in which I have created cross link sheet which has each approver reminder days setting. While sending approval request I want to capture a flag or number once approval notification trigger but currently it's not possible since I can capture once it's get approved or rejected. I need to update a column before sending approval request.

It it possible? or need your valuable suggestion to meet above scenario.

Change cell value, Clear Cell Value and Record a Date is last action. after this action I cannot add more task or action.

I looking after change cell value or record a date option to add more action or task.

I hope option will be added in future.
