Why are selected dates displaying 1 day prior?
If I enter Jan 19, 2023 in the due date field, it appears as Jan 18, 2023. No changes have been made to the settings.

It sounds like you may have Dependencies enabled on your sheet, is that correct?
If so, you'll want to add your Start Date first, before adding in a Due Date. Then you can either adjust the Duration for that row to bump out the Due Date, or adjust the Due Date to change the Duration.

@Genevieve P. I'm having the same issue as OP, all dates are entering one day prior, and I have no dependencies enabled or specified for that row. So for example, if I have a project milestone row which is due 4/19, I enter "4/19" in Finish column, but it automatically switches to 4/18. Seems like a bug.
