Currently, I have to refresh every day I need to see the most up-to-date number of days remaining for an event. I'm surprised this doesn't exist already considering how many tools there are for event and project launch coordination.

Are you using the TODAY function in your sheet? If that's the refresh you're referring to, here's a Help Article that provides a few options for automatically refreshing your sheet: Automatically update the TODAY function in formulas
