The issue I am having is that the colors keep defaulting to a "wrong" color when the data set changes. For example, when I set up the series colors, I coded the colors to the sheet data set. Let's say on Monday, they have an overdue item and they have a red slice. On Wednesday, they don't have overdue so no red slice. Then on Friday they do have overdue items but then the color defaults to something totally different (it might show up as yellow, blue or some other color). Is there a way to hard code these so this doesn't happen? Thanks! (see attached pictures)

You are going to need to make a slight adjustment to your source data. Basically what you want to do is add an additional 0.0001 to the end so that technically the count never goes below zero, but the 0.0001 will not show on the chart.
