Do you know how to easily change the name of a data profile (in CC and in respectives columns ?) with global updates ?

You can run global Find/Replace updates on Profile Data fields!

Here's the information from this Help Article: Control Center Global Updates: Find / Replace

To make changes to profile data values or formulas in the Summary section, use the Advanced Options section to add the condition [Row] is Metadata. When you do this, the Find/Replace will be applied only to the Summary section—the rest of the sheet will be skipped.

Note that changing the name of a piece of profile data will not automatically update the configuration. Changes in profile data names will need to be updated using the SCC Builder.
