Can you change the names of the indicators from Red, Yellow, Green?

I am looking to have an indicator show next to my priority row based on what is selected (i.e., High = Red, Medium = Yellow, Low = Green) in the same cell.

Right now I have it set up in separate cells. I would like this to be combined as one.

Yes, I think we could make that work with a Workflow combined with the Change a Cell Action and Emojis.
