Allow Re-Labeling of Symbol Fields

Please allow re-labeling of symbol fields. In a training survey I'm building (shown below), I would rather the values not say "Empty," "One," etc... I should be able to customize them to say what I want. Maybe not on the grid but at least when building out the form, similar to the way you can customize the label of the question.
