Activity Log Update & Workflow Changes

I have a Workflow that tells me when a Release (Unique ID) has been deleted from a sheet used by another team. They never seem to tell me when they are actually changing the value. This is a common practice unfortunately. I would like to have the ability to do 2 things.

1) Display the Old and New value of this change in a workflow

For instance "Row 123 shows a change for the Release (column) from 567890 to 56790 - MIX"

2) Also in the Activity log, allow a search based on the row # changes happened.
