Bundle together rows under 7 and use placeholders in workflow automation update request

We have a scenario where Sponsors are asked to provide short updates on all of the projects, they have responsibility for. The notification they receive includes placeholders to show the project name. The feedback on this is that they would like to receive one email showing all the projects they are responsible for and the fields they need to update.
However, the feedback from those who already receive a single email (over 7 notifications) is that they can't tell what they are updating because the custom placeholders are removed.
The ideal solution would be to enable custom placeholders to work regardless of the number and have an option to bundle notifications or not.
