What template can i use to facilitate paperless employee files with tracking and alerts?

We currently have a paper solution/big bulky employee file. We are trying to move into a paperless solution, where we can not only track the basic documents for new hires and ongoing employees but for example when an employee is due to complete a module and or sign off on a policy. Is there any capabilities that anyone has found in Smartsheet's for this kind of build? We are talking for over 100 employees, meaning 100 employee files within Smartsheet's. Thoughts? Thanks!
