Daily PO Status tracker, with visual alert, if delay in any of multiple department's queues

Need to combine multiple department's reports into I'm assuming a dashboard that visually shows the status of the parts on order for the PO with status of the queues after flipped to an order. I can't figure out how to push daily status of the parts on order for the PO to a central report, but maintains the history of the previous status's.
I think I need a sheet, or mesh(?) setup,
- Primary column: PO#
- Column's that are linked, or updated w daily status:
- "Material readiness date"
- "Material status" (which indicates if I have stock to flip from PO to SO)
But if I push updates using mesh, how do I keep the previous history, per day, of the status's? I want to run analytics for the PO's to show total days from PO placed, to flipped to SO, and days in each variation of "Material Status".
Is this a sheet w/ helper column's? Is this a Mesh that pushes daily updates to multiple sheets or reports? Is this a dashboard that has to have each status setup in it's own report?
I've gone through a lot of the training videos, but I'm honestly just overwhelmed at this point! Appreciate any best suggestions.

I don't have a solution but want to share I'm having a similar struggle as you. Wanting to have updated dashboards that update with the dynamics of data entry without having to manually do this by adjust ranges in the formulas every day. I'll be following your post closely.

Currently, I upload a new sheet each day, then have formulas on a main sheet that I update daily, to point to the new sheet. Then I go to each report I have created, and change the sheet that is linked to the report. So essentially the dashboard for the customer does show the daily updates. But I know there is a better way, and I'm missing the history for analytics for the different departments. The project templates seem like they could work, but I'm lost in how to take my specific scenario and use the existing functions/ formula's to make it work. Learning as I go!
